A clean and minimalist shoyu ramen that has made itself into the Michellin guide
This humble looking shop was tucked away near a station in a rather suburban area of Tokyo near Ikkebukuro. The ramen came in a clear shoyu broth with a whole uncut egg and rectangular pieces of onion floating on it. This ramen has a very clean and light taste. Overall, this ramen tasted pretty westernised and although it was pretty good, I don't know how it made it to the michellin guide.
